My name is Paul Maccario, I grew up on the east coast of Florida.  I began working in kitchens when I was 15 years old.  I got to taste and work with some unique seafood such as conch, grouper, pompano, and stone crab claws. In 2000 I went to The Culinary Institute of America in Hyde Park, NY to be classically trained in the Culinary Arts. After I graduated, I decided to move to Seattle in 2003 to see the West Coast and all its amazing culinary fare. I expanded my culinary training and knowledge by cooking at some amazing restaurants. I worked at various fine dining restaurants such as The Barking Frog, Columbia Tower Club, Daniel's Broiler, and even for Tom Douglas at Dahlia Lounge to name a few.  While working at Dahlia Lounge, I met my future wife who was working at Lola, another of Tom Douglas's restaurants. We got married, and decided we wanted to move out of the city. We moved to Camano Island in 2015 and love it here. The natural beauty is all around Camano. There is wild edible food growing all over Camano from the stinging nettles, miner's lettuce, and wood sorrel to the sea beans on the coast. My wife and I have a young toddler son who will be Camano Grown to the truest sense. He has been on these trails since he could walk.  I am excited to introduce myself to you and launch Scratch Cooking here on Camano Island to serve this great community.
