Hi everyone, I'm Chef Paul Maccario!
Growing up on the East Coast of Florida, fresh seafood was a way of life. From conch fritters to stone crab claws, my early kitchen experiences were filled with the bounty of the ocean.

In 2000, I took my passion for food to the next level and enrolled at The Culinary Institute of America in Hyde Park, NY. After graduation, the call of the West Coast proved too strong, and I landed in Seattle in 2003.
Seattle's vibrant culinary scene was an incredible training ground. I honed my skills at some of the city's finest restaurants, including The Barking Frog, Columbia Tower Club, Daniel's Broiler, and Tom Douglas's Dahlia Lounge. It was there that I met my lovely wife, who was working at another Tom Douglas restaurant, Lola.

In 2015, we decided to trade city life for the beauty of Camano Island. Surrounded by nature's bounty, from wild edibles like nettles and sorrel to fresh seafood along the coast, Camano Island feels like home. Here, my wife and I are raising our son, who's been exploring the island's trails since he could walk!

I'm thrilled to launch Scratch Cooking and share my love of food with this wonderful Camano Island community. Get ready to discover the joy of cooking fresh, seasonal dishes – from the islands to your table!
